MIXED GREENS WITH PLUMS, FETA, RED ONION AND PISTACHIOS

Mixed Greens with Plums, Feta, Red Onion and Pistachios
Serves 6 —  recipe by CourtÂney McDonald
IngreÂdiÂents:
- 6 cups mixed greens, washed and spun dry
- 3 ripe plums, pitÂted and cut into wedges
- 1/2 red onion, thinly sliced and rinsed in cold water
- 1/4 cup Snow’s CitÂrus Court Orange BalÂsamic Dressing
- 3/4 cup crumÂbled feta cheese
- 1/2 cup roasted and shelled pistachios
- Salt and freshly ground black pepÂper, to taste
Instructions:
In a large bowl, toss the mixed greens, plums and red onion. DrizÂzle enough of the balÂsamic dressÂing over and toss to coat to your likÂing. SeaÂson to taste with salt and pepÂper. Arrange salad onto 6 servÂing plates and top with the roasted pisÂtaÂchios and crumÂbled feta cheese. Serve immediately.
